Recipe for cranberry scones
You'll need:
2 cups all-purpose flour
1 tbsp baking poweder
¼ cup brown sugar
¼ tsp salt
¼ ground nutmeg
1 cup roughly chopped fresh cranberries
¼ cup butter, chilled and diced
1/3 cup white sugar
½ cup walnuts, chopped
1 grated zest of orange
1 egg
¾ cup half-and-half cream
Directions:
Preheat oven to 190 degrees C (375 degrees F)
Take out a large bowl, and stir together the salt, nutmeg, baking powder, brown sugar and flour. Cut in butter and stir until the mixture resembles coarse crumbs.
Toss cranberries with sugar in a separate bowl. Then add this to flour mixture along with nuts and orange peel. Stir lightly.
Bring out a third bowl. In the bowl beat together cream and egg, slowly pouring in dry ingredients and mixing with scraper until dough forms. Knead dough 3 or 5 times or until desired consistency is achieved. Divide the dough in half, and then it turn out over a lightly-floured surface. Shape each portion into a 6-inch circle, then cut into 6 wedges. Lightly grease the baking sheet before placing the scones on it.
Bake in oven until golden brown, or about 20 minutes. Serve warm on a Christmas morning with butter and tea. Enjoy.
Recipe for cranberry bread
You'll need:
2 cups all-purpose flour, sifted
1 ½ tsp baking powder
1 cup white sugar
1 tsp salt
¼ cup butter
½ tsp baking soda
1 egg, beaten
¾ cup orange juice
1 tsp orange zest
1 ½ cups cranberries, chopped
1 ½ cups golden raisins
Directions:
Preheat oven to 175 degrees C (350 degrees F). Spray one 9x5x3 inch loaf pan.
Then whisk together the baking powder, sugar, flour, baking soda and salt.
Cut in butter until the mixture is crumbly. Add orange peel, orange juice and egg. Stir lightly and fold in cranberries and raisins.
Pour everything into loaf pan and allow to bake for 70 minutes, or until toothpick inserted into the upper layer comes out clean.
Remove from pan. Allow to cool. Enjoy your cranberry bread!
